1 lb. peeled, de-veined and de-tailed shrimp
3 packages shrimp flavored ramen noodles, 2 seasoning packets reserved
5 C. water
1 can coconut milk or lite coconut milk*
2 T. sesame oil
1 T. rice vinegar
2 T. Sriracha
2 C. frozen, chopped kale
*If you don't like the flavor of coconut, don't worry, you can't taste it. This ingredient is important for depth of flavor and rich consistency.
In large pot, bring water and coconut milk to a boil. Add in noodles and shrimp, cook three minutes. Remove from heat, stir in 2 packets seasoning, sesame oil, rice vinegar, Sriracha, and kale. Serve, and enjoy!
